We had this awesome taco pie for supper last night. The original recipe is from Kraft and you can find it HERE. I used to think that if I wanted to eat better, the only way to do that was to swear off everything that wasn’t 100% healthy and “clean”. That led to a lot of frustration because it was hard for me to find a variety of things that we all would like meeting that strict criteria. It also made me mad because I like to be able to eat what I want when I want! I finally decided that we didn’t have to give up everything we loved in the name of eating better. There are ways to enjoy all kinds of foods, without guilt, by just making a few changes here and there.
So, what I did with this recipe was to swap out a few things to fit more in line with how I like to cook/eat. I used ground turkey instead of beef. I also used greek yogurt in place of sour cream. I used less cheese than what the recipe calls for. I used whole wheat tortillas (I think maybe the recipe actually does call for those).
This was delicious and very filling. I can think of lots of different ways to make this, too. You could use avocado in place of the sour cream or add in some bell peppers, black beans, etc. Lots of possibilities here. And please note that I do not claim to be the leading authority on how people should eat in order to be fit. I post about the way I do it and what works for me. I’m not perfect, my body isn’t perfect, but it IS strong and I feel great…I’m just a mom who is trying to be fit while maintaining her sanity. That doesn’t make me right and someone else wrong or vice versa. This is just how we do it and it works for us.
