Pizza is by far my most favorite food on the planet. I love it almost as much as I love my children, no joke. We have a little pizza shop in our town that makes the most AMAZING pizza, but it’s sooooo heavy and loaded with cheese that even one piece is kind of ridiculous, nutritionally speaking, and who am I kidding? I don’t eat just one piece. Ever. So since I can’t really have it as much as I’d like, I like to make this when the cravings are hitting but I want to maintain my fitness dignity.
This chicken pita pizza is made using my homemade pasta sauce and I hate to brag, but it is so much the bomb. It’s probably the most popular recipe in my monthly fitness groups. Its thick and tasty and makes up in a snap. You can use it as a pizza sauce or I also like to make it with some whole wheat spaghetti or in my Chicken Italiano.
1 chicken breast, cooked & cut into bite-sized pieces (I like to cook mine seasoned with a little chipotle powder and garlic powder)
1 whole wheat pita
spinach leaves (optional)
diced peppers & zucchini (or any veggies you prefer)
homemade pasta sauce
Preheat oven to 350 degrees and place pita directly on the middle rack. Heat until crispy, then remove from oven.
Top pizza with sauce, chicken, and veggies. Sprinkle a bit of mozzarella on top & return to oven until cheese is melted. Serves 1.
I usually make this for lunch, but you could definitely make several at once to feed the whole family.
